Mediterranean Diet Plan 🇺🇸 on Instagram: "Grilled eggplant, tomato & feta salad Cre by @cheftomwalton Serves 4 Ingredients 2 medium eggplant sliced into 1cm thick rounds 1/3 cup olive oil Salt, pepper 12 baby bella roma tomatoes 12 kalamata olives 1 ½ tbsp red wine vinegar Large handful flat leaf parsley, roughly chopped 100g danish style feta cheese Method - Preheat a grill plate or BBQ on a high heat. - Brush both sides the eggplant with ¾ of the olive oil, season with salt and pepper and cook in batches on the grill or BBQ for approx. 4 minutes, turning halfway through cooking. You want nice caramelisation on the eggplant, and it should be soft. - Place the eggplant into a mixing bowl and allow to cool to room temp then and add the tomatoes, olives, and parsley. - Dress with the vin
