Das folgende Rezept verwendet Lachs, der auch auf Hawaii sehr oft statt bzw. gemeinsam mit Thunfisch verwendet wird. In Österreich ist Lachs außerdem oft leichter erhältlich und meist nachhaltiger. Der rohe Fisch wird in zwei verschiedenen Marinaden zubereitet – einerseits als "shoyu poke" auf Soja-Saucen Basis und als "spicy mayo poke". Jede Marinade reicht für 350 Gramm Fisch. Wer beide Marinaden verwendet, muss die angegebenen Saucen-Menge halbieren oder die Fischmenge verdoppeln.
