Cashew Chicken--Use 1/4 C soy sauce rather than 1/2. Add a bit of chicken broth to get more sauce? Use half green and half a red pepper. Raw cashews are fine. Add green onions when adding ginger and garlic and saute them together. Reduce slurry ingredients by half. If prep chopped ingredients ahead of time, this could easily be thrown together in 20 minutes. This is maybe 3 or 4 servings.
