It is the Mexican version of pulled pork, except it is slow cooked in lard for a crispy exterior and super tender & moist on the inside. This dish originated in the state of Michoacán, and every region has their own way of making it. My recipe isn’t particularly from any region- this is just how I like it, pulling ideas from the different ways it is made across Mexico.
