Roasted Vegetable Tacos with Avocado Cream and Feta: I& made these twice now and they were a huge hit each time. The avocado cream is particularly wonderful. I add black beans to the veggie mix (protein!) and use goat cheese instead of feta.
Scored Potatoes Recipe: Cook potato on Microwave (about minutes) wrapped in a wet paper towel. Cut open--as seen in picture--but just to the skin. Season with butter, parm cheese, and Lawry's Seasoning salt--Broil for 10 minutes -potatoes for me
