Vegan cheese making tip :). After making a vegan cheese (this one is my olive-cilantro mozzarella with a base of soy milk, aquafaba, and jasmin rice), take it out of the mould as soon as it is firm enough to handle. Place it uncovered on some kitchen paper towels on a plate and leave it in the fridge like that for about 24 hours. Only then wrap it in paper towels and place it in a plastic container. This process greatly aids in reducing the moisture content and thus creating a firmer cheese.
