Antique Motif: Three Running hares, early to century Dutch cookie board. World wide image and very ancient. Found in Britain along side traces of hare worship as a goddess.

Aaltje's cookbook has quite a printing history. The first edition, Aaltje, de volmaakte en zuinige keukenmeid, (Aaltje the perfect and economical housekeeper) appeared in 1803. The author declares in her introduction ('voorrede') that she has had the supervision over several kitchens for forty years.

A Dutch recipe from the century for a classic dish: salmon mayonnaise. And about Betje and Aaltje, the two most succesful cookbooks from the century.
