Mofo Ravina ou Koba (Kouba) – These rice cakes wrapped and cooked in banana leaves are a common street food in Madagascar. Similar to a tamale, these rice cakes can be served as a sweet dessert, or a savory snack.
Varenga is a Malagasy main-dish that is low-maintenance and seasoned with just garlic, onion and salt. The beef is boiled, shredded and then roasted. The meat turns out a bit dry (as the recipe intends) with a little crunch.
