Cashel Palace
At the foot of a hill — in the shadow of Ireland’s most iconic medieval site, the Rock of Cashel — stands another architectural masterpiece, Cashel Palace. Built in 1728 by Sir Edward Lovett Pearce, the architect who designed the Parliament House in Dublin, this red brick manor was once the residence of Ireland’s archbishops. Irish cuisine that celebrates food and nature, the ultimate sources of life: this is the motivation of chef Stephen Hayes at The Bishop's Buttery. His menus, at the gourmet restaurant of Cashel Palace, follow the rhythm of the seasons and reveal a modern style of cuisine infused with French culinary touches.

L'Assiette Champenoise Restaurant
Cuisine is an incredibly unique process intimately bound to each chef's DNA. When you cook, you never forget who you are: where you come from, who you are cooking for, and especially where you're cooking. I have two signature dishes. The first is my blue lobster, which is a tribute to my father. It's a festive dish that Dad used to whip up on special occasions. The second is my Breton jumbo shrimp, which is my absolute favorite.
